In my undergraduate program at Benedictine University, I was awarded the community nutrition award; which is awarded to dietetic students that provide service to the community through nutrition. Fast forward a few years, and I have been a dietitian for almost 4 years. It is enlightening to see how much has changed since the beginning of my career. As well as how much I have learned and grown throughout while educating clients about their nutrition needs. Her curiosity for food and nutrition began at a young age harvesting and preparing the fresh fruits and vegetables grown right in her own backyard. She completed her bachelor’s degree in Nutrition and Dietetics at Penn State University. After graduation, she traveled to New Orleans, Louisiana to complete over 1000 hours of supervised practice at Tulane School of Public Health and Tropical Medicine. Her experience has allowed her to provide evidence-based nutrition education to diverse populations with a variety of nutritional needs.

Meredith Starr is a registered dietitian and Director of Nutrition Services at Allow Wellness in Chicago. She is an alumna of the University of Illinois at Chicago Coordinated Nutrition Program and began her nutrition career at UI Health general inpatient services while working part-time at a residential treatment facility for eating disorders. Meredith is deeply passionate about the treatment of eating disorders and has been practicing in this field for the past seven years.
