She earned her Bachelor of Science from Central Missouri State University, graduating as the chapter’s President of Kappa Omicron Nu Honors Fraternity. Her didactic practicum was completed at Jewish College of Nursing and Allied Health in association with Barnes Jewish Hospital and Washington University.

Sara has been a Registered Dietitian since 2016. She specializes in providing medical nutrition therapy for oncology patients. She works with patients prior to starting cancer treatment, during treatment, and for nutrition therapy after completing treatment. During her spare time, Sara enjoys traveling, playing tennis, and hiking.

My name is Michel Harris and I have been a Registered Dietitian since 2000 and a Certified Diabetes Care and Education Specialist since 2010. I completed my undergraduate and graduate studies at Benedictine University before by internship at Hines VA Hospital. Some of my past work experiences have included long term care, foodservice management, private practice serving individuals with eating disorders, and inpatient positions in hospitals. My passion for teaching the future generation of nutrition professionals led me to start teaching in 2018.

Claire Allen MS, RDN, LDN is a nutrition expert with a focus on gastrointestinal disease and disorders. She received her Master’s in Science in Nutrition from the University of Illinois at Chicago and has worked in a private outpatient gastroenterology clinic the past 4+ years. Her expertise includes dietary management of Irritable Bowel Syndrome (IBS), Small Intestinal Bacterial Overgrowth (SIBO), Crohn's disease, Celiac disease, Ulcerative Colitis (UC), Eosinophilic Esophagitis (EoE), Congenital Sucrase Isomaltase Deficiency (CSID), Gastroparesis, GERD and low histamine diets.

I was born and raised in Chicago, attended the University of Dayton for undergrad (Go Flyers!) and received my master's degree at Central Michigan University. I currently work at the University of Chicago as the liver transplant dietitian, specializing in all types of liver disease. I am Board Certified in Integrative and functional Medicine. That means that I work with clients to find the root causes of their symptoms in a holistic way. We are learning that maintaining our gut health is the root of treating many diseases including autoimmune, inflammatory, skin, obesity, cancer, allergies, and more. I work with clients to figure out why they are struggling with a condition and treat it using food as medicine, identifying food sensitivities, providing nutrients to maximize the body's functioning, and if needed, I do cooking sessions to teach how to make healthy food taste great.

Laurie is the founder and chief executive manager of Insight EAP LLC. She is a licensed clinical social worker as well as a licensed acupuncturist who practices integrative health care in Chicago and Park Ridge, IL. Her integrative approach is one that incorporates psychotherapy, Chinese Medicine, nutritional counseling, and exercise, treating the mind - body in a truly holistic way.

Haley is a Registered Dietitian practicing lifestyle medicine. This whole-person approach to wellness recognizes that our physical health is very much connected to our mental/emotional health. Haley received her education from the University of Illinois at Urbana-Champaign and completed her dietetic internship in Chicago through Aramark Healthcare+.
