Her curiosity for food and nutrition began at a young age harvesting and preparing the fresh fruits and vegetables grown right in her own backyard. She completed her bachelor’s degree in Nutrition and Dietetics at Penn State University. After graduation, she traveled to New Orleans, Louisiana to complete over 1000 hours of supervised practice at Tulane School of Public Health and Tropical Medicine. Her experience has allowed her to provide evidence-based nutrition education to diverse populations with a variety of nutritional needs.

Laurie is the founder and chief executive manager of Insight EAP LLC. She is a licensed clinical social worker as well as a licensed acupuncturist who practices integrative health care in Chicago and Park Ridge, IL. Her integrative approach is one that incorporates psychotherapy, Chinese Medicine, nutritional counseling, and exercise, treating the mind - body in a truly holistic way.

Jessica became a Registered Dietitian Nutritionist after completing her Dietetic Internship and master’s degree in Clinical Nutrition through Murray State University, Kentucky. Rosemary is a Registered Dietitian and Licensed Dietitian Nutritionist certified by the Commission on Dietetic Registration. She completed her dietetic clinicals at UChicago Medicine Ingalls Memorial after graduating from the University of Pittsburgh.Rosemary credits her strong clinical foundation when applying evidenced-based medical nutrition therapy to clients one on one. She believes creating small changes over time will make a large difference - especially when it comes to nutrition! She also completed her 1,200+ hour dietetic internship that focused on both community and clinical dietetics. She received her Master’s in Science in Nutrition from the University of Illinois at Chicago and has worked in a private outpatient gastroenterology clinic the past 4+ years.
