She graduated with her Master of Science in Human Nutrition from The University of Alabama and her Bachelor of Science in Dietetics and Nutrition from The University of Mississippi. She completed her dietetic internship from Vanderbilt University Medical Center. Megan has been practicing as a Registered Dietitian for 5 years. The first 2 years of her career as a dietitian, she specialized in meal planning, menu building, and nutrition education material development.

Xyomara Beltran, RDN, MA, CHES, LDN, MBA, CPC is a Board-Certified Registered Dietitian Nutritionist with over 21 years of experience as a Registered Dietitian Nutritionist and Professional Coach. She received a Bachelor of Science (B.S.) degree in Human Nutrition, Food and Exercise from Virginia Tech and completed her Dietetic Internship at New York-Presbyterian Weill Cornell Medical Center. Additionally, she completed a Master of Arts in Health Education at Teachers College, Columbia University, and her Healthcare Executive Master of Business Administration (M.B.A.) at the University of Miami.

Hi, I am Janelle Middleton, MPH, RDN, LDN. I completed my graduate course work at Loma Linda University in California and undergraduate studies at Dominican University in River Forest, Illinois. I have 8 years of RD experience and earned Employee of the Month in my previous clinical nutrition role. Since I would describe myself as very much a people person, naturally inquisitive, and a great listener, you can expect to feel heard and supported in our sessions. I pride myself on being empathetic and encouraging, while effectively holding you accountable to the goals YOU set for yourself.

In our office we pride ourselves on providing a loving, compassionate, supportive environment to help our patients not only regain their health, vitality and youth, but also to maintain their health once regained. Amanda is a Registered Dietitian Nutritionist (RDN) that specializes in plant-based eating, sports nutrition, & the intersection of the two. She also likes to work with those who have ARFID (Avoidant Restrictive Food Intake Disorder) due to her own lived experience & because there are not many dietitians who have experience in or understand it. She is a former high school science teacher with a M.Ed in science education who changed careers to become a RDN. She is also an avid runner & former division 1 cross country/ track athlete, who is enthusiastic about & fueled by a vegan diet. Amanda is also a UESCA Certified Running Coach.

She received her Master’s in Science in Nutrition from the University of Illinois at Chicago and has worked in a private outpatient gastroenterology clinic the past 4+ years. Her expertise includes dietary management of Irritable Bowel Syndrome (IBS), Small Intestinal Bacterial Overgrowth (SIBO), Crohn's disease, Celiac disease, Ulcerative Colitis (UC), Eosinophilic Esophagitis (EoE), Congenital Sucrase Isomaltase Deficiency (CSID), Gastroparesis, GERD and low histamine diets.

Eric Meredith is a Registered Dietitian, Classically Trained Chef, and Certified Personal Trainer with over 10 years' experience working with a wide variety of clients including Type 1 and 2 diabetics, athletes, cancer survivors, individuals with digestive disorders, and those who are looking to better manage their weight. Eric graduated from the University of Illinois at Chicago with a Master of Science in Human Nutrition and Master of Education. He is also a Certified Health Education Specialist. Eric enjoys working one-on-one with clients to tailor their eating habits to support their individual health.

In my undergraduate program at Benedictine University, I was awarded the community nutrition award; which is awarded to dietetic students that provide service to the community through nutrition. Fast forward a few years, and I have been a dietitian for almost 4 years. It is enlightening to see how much has changed since the beginning of my career. As well as how much I have learned and grown throughout while educating clients about their nutrition needs.
